Now when we talk about more desirable and less desirable fish, some find king mackerel not very high on the more desirable list. However, when king mackerel is fresh, it is one of my favorites.
We all know that king mackerel are easy to catch. They will eventually show up on your hook whether you want them to or not.
I have found that they are also easy to clean and cook. If you don’t mind a t-bone shaped bone in the center, like in a beef steak, then you can also make king mackerel into a great tasting dinner.
Also try this side dish of bleu cheese mashed potatoes. It’s one of my wife’s secrets, so keep in mind there may be one ingredient missing (sorry!).
This is what you will need:
2 king mackerel steaks cut 1.5 inch thick
1/2 cup of your favorite BBQ sauce (for sweet go with Kraft Original, and for tangy go with Carolina Treet)
2 large russet potatoes (washed and peeled)
2 tablespoons butter
1/2 cup bleu cheese dressing
splash of milk
salt and pepper to taste
For the fish, add enough of your favorite BBQ sauce to cover the king mackerel steaks. Then pre-heat grill.
Once the grill is hot and ready, pull the fish out of the sauce and put on the grill. Cook for 5 minutes on each side, basting occasionally with sauce.
For the potatoes, heat a pot of water. Cut up the potatoes to speed up cooking. Once they are done (fork tender), drain and then add the butter, bleu cheese, splash of milk, and salt and pepper.
The rest will fall right into place. Remember, be creative with what you have, and have fun!
